Miko Calo is the first Filipino chef to have a residency at Makati Shangri-La, Manila. She and her all-women culinary team will be at Sage Bar from 21 October to 14 December 2024. Miko’s residency menu advances her unique culinary vision, beyond what she offers at her previous restaurant, Metronome, which was awarded by Tatler Dining for Best Restaurant in 2019 and earned her the Chef of the Year award in 2022. Her cooking remains grounded in French techniques, but she also creates dishes inspired by the food she loved as a child and continues to enjoy.
To elevate the dining experience, Miko Calo reintroduces the AVEC Series at Makati Shangri-La, wherein she invites some of the best chefs in the Philippines for a series of one-night-only collaborations. “I have been lucky to work with some of the best people in the restaurant industry and even more grateful to count most of them as friends,” shares Miko. Since I am here doing the residency, I thought why not bring them along for the ride?” she continues.
Every Monday from 18 November to 9 December, Miko is honored to invite her friends, some of the best in Philipine gastronomy.
